The Finer Details
For a short period in the 1970s, there was a tradition within the family business to fill casks on Hogmanay for onward aging – a way to bid farewell to the current year and welcome in the next.
While such practices have long since ceased, the casks laid down decades ago have continued to age on; building in character with every year.
Nose
The nose is syrupy and complex, carrying a sticky jam quality with a sprinkle of brown sugar, wafts of treacle scone, Dundee cake and a hint of spiced ginger wine.
Palate
The festive decadence continues on the palate with an oaky quality opening up, that wonderful spiced character continuing to deepen and a perfectly poised balance of sweetness, oak and spice emerging.
